Breakfast has become one of my favorite Paleo meals, but that's because it usually consists of some eggs, coffee, and a lot of bacon. So when my new friend Sarah asked me about my take on egg-free Paleo breakfasts, I was actually not sure what to say for a few minutes. I didn't have any advice! Then, I remembered something good. Smoothies!
I like to throw a couple handfuls of spinach into my fruit smoothies because it makes me feel sneaky. You can't taste it and if the color doesn't bother you, you're really not going to be able to tell the difference. Unfortunately, a smoothie doesn't keep me full nearly long enough, even with spinach. So, I threw half of an avocado in the blender, and it did the trick!
Ingredients:
Makes one big smoothie or two smaller ones.
1-2 handfuls of spinach
1/2 cup almond milk
1/2 cup strawberries + blueberries
(fresh is good but frozen is fine)

1-2 tbsp honey (more if you like)
1/2 of an avocado
1 banana
8-10 large ice cubes
1. Put ingredients in blender.
2. Blend.
3. Pour into a cute jar and drink with a straw.
This looks so delicious and healthy. I like the addition of avocado. I'm going to try this for sure.

I usually add wheatgrass in there from time to time as well.
The avocado threw me too. I have never added it, could you taste it?? We love green smoothies mainly because you can't taste all the healthy stuff.
ReplyDeleteMy mom's house has nothing healthy to eat, so I have been searching for ways to use the frozen strawberries in the back of the freezer. I've gotten desperate. This sounds pretty darn good though, sans the avocado
ReplyDeleteI promise you can't really tell that the avocado is in there. If you add extra ice and honey, you'll really not even notice.
ReplyDeleteIf you're afraid of the avocado but need more substance, try nuts or almond butter (maybe cut back on the honey then too)
ReplyDeletethat looks tasty....we drink kale, carrot, cucumber juicers in the summer when kale is bountiful in the garden. it's not as sweet as yours, but it's good. we even force the kids to drink it! they've gotten pretty good about it now. thanks for the recipe!

ReplyDeleteDid you lay out those different foods on the cutting board? That's a very nice arrangement for a picture! I am glad you've finally given me a use for raw honey. Noah's uncle owns a farm market and I've wanted to use raw honey for a long time but wasn't sure what to use it in!

ReplyDeleteOoh that's a good idea! I'm still going strong with the Paleo thing, three weeks in and I just love it. The low carb flu passed and I feel wonderful. May have something to do with the fact that I just whipped up a batch of Paleo brownies though : ) like you I'm moving and all this lifting and packing means I get a treat : )

ReplyDeleteI used to be a big green smoothie drinker! James told me that blending the fruit makes the sugar go into your system faster... he's such a paleo party pooper. Let's drink these next weekend. James wont be there.

ReplyDeleteJenna, i heard that Juicing the Fruit and and stripping it of its fiber makes it go into your system faster. I'll do a little bit of research but this looks pretty good, and pretty simple. I hate any smoothie that seems like it take a whole bag of Spinach and a ton of other things to make it.
This looks incredible. Love that you served it in a mason jar. Also, I'm impressed you just happen to have all of those ingredients.
