This batch wasn't as thick and creamy as it usually is, maybe because I used a mixer. Usually we make it in a blender, but for some reason, our blender is lost somewhere between Minnesota and Virginia. I love my mixer, but I'll probably continue to make mayo in the blender as soon as we get a new one.

Oh, wow! I always imagined mayo being a lot harder to make. I find we can never go through store bought mayo before its expiry date, so this would be a great (and healthier) alternative!

Deletewell this debunks everything I've ever learned and tried about making mayo!! I always stream in the oil...like ALL of it. I've never put 1/4 cup in from the getgo, but that would defintely make it easier. Oh, and it usually takes me like 30 minutes to make mine. Again, with all the streaming--and i'm talking like, dots of oil at a time! it comes out the right way but it's a pain in the ASS to make! And i usually do it in my mixer! :)

DeleteFirst, judging by your mixer, you lost a fabulous blender and that nearly makes me cry. I love the red, mine is black and I've had it for nearly twenty years. I think often about having it pimped out with a custom paint job. I also want to buy myself one of the new glass bowls, those are beautiful. Two, like your mom, I make mayo in a blender, a Vitamix to be exact, and it takes exactly twenty seconds! Then I stir some fresh mayo into a bowl of shredded chicken and when noone is looking I splash the whole thing with maple syrup and stir like a demon before any one catches my secret ingredient! Finally, love your new kitchen! So pretty!

I love my mixer! We had just a pretty regular, run-of-the-mill blender, but instead of buying another, we're just going to register for a new one!
