A few of the following photos might be a little boring because, well, they're of cauliflower. But I promise that if you make the following recipe, the flavor will be anything but boring. My mom made this the other day and I took a bite and was like "WHAT IS THIS?" Maybe it was just unexpected, but I'm pretty sure curry and cauliflower were meant to be together.
Ingredients:
One head of cauliflower
3 tablespoons coconut oil
1 tablespoon of curry powder
1 teaspoon of garlic powder
Salt and pepper, to taste
Salt and pepper, to taste
1. Wash and chop cauliflower.
2. Toss cauliflower with melted coconut oil, curry powder, garlic powder, salt, and pepper.
3. Bake in the oven at 350 for 40-45 minutes.

Whoa, those look pretty tasty! I am not usually a curry person, but these look so tasty (and easy!) I might have to give it a try. We have been way too lazy about cooking in my house lately and could really use some quick, healthy snacks or side dishes :)
